ingredient :
1 medium head cauliflower
3 tablespoons olive oil
3 cloves garlic, peeled
2 tablespoons chopped fresh parsley, divided
salt
1 tablespoon sweet paprika
2 tablespoons sherry vinegar or red wine thick
Intruction :
1. Core and cut cauliflower into small pieces. Steam or boil for 5 minutes, until tender but not fully cooked. Turn off heat and cover the pan.
2. Meanwhile, heat oil and garlic in heavy skillet over medium-low. When garlic turns brown, turn off the heat and transfer the garlic to a mortar or heavy bowl. Using a wooden spoon or a pestle, pound garlic with 1 tablespoon parsley and salt to form a coarse paste.
3. Remove the cauliflower to a serving dish, reserving ¼ cup cooking water. During low heat, combine peppers, vinegar, ¼ cup water and cook the garlic-parsley mixture. Stir quickly to combine. Pour sauce over cauliflower. Garnish with remaining parsley. end
